1. What happens in Odoo if you change the "Product Type" from Goods to "Service"?

The inventory tracking Smart Button disappears, and you must select a color for the service. New fields appear, such as "Create on Order" to automatically generate a Task or Project. Odoo automatically sends an invoice to the customer as soon as the service is selected.
